Well after finally making those slippers I started doing some stuff I have been wanting to do but never really got around to it!
One of those things was to make these Cake Cookies!
I however changed a few things.
I didn't add Peanut Butter~ we are big on Peanut Butter in my house.
Now I would have put in Chocolate Chips but I didn't have any.
Recipe:
I box of white cake mix (got on sale for a buck!)
*you could so use any kind (like chocolate)
1/4 cup of Milke (I used Soy Milk)
2 Eggs
Mix all together
Drop on an oiled cookies sheet~ dough is super sticky so mine didn't come out looking all pretty.
not sure if the peanut butter would have helped that at all.
Bake 350 for 10-12 min
I also bought frosting for them but really they are much tastier with out frosting.
I am enjoying some right now with my Chai Tea!
These are also great when you have to make a desert but all you have is a box of cake mix & no frosting.

So I am still obsessed with the Kale chips but realized I never told you how to make them!
Just rinse & tear the leaves into bite size pieces.
Pat dry.
Drizzle some olive oil over the leaves (put them on a cookie sheet first)
Sprinkle with some salt (I used kosher but sea salt would be good to)
Sprinkle with Nutrional yeast (about a handful)
Massage it all into the leaves.
Bake at 375 for 15 min.
I move them around after the 15 min as if they were wet it will take longer for them too cook.
You want them brown and crisp.
I also put them out put the crisp ones in a bowl (and my mouth) then put the rest in the oven on off.
New Green Snack!!
Take a cup of dried peas & soak them in about 2-3 cups of water for about 4 hours.
Drain & Pat dry.
Heat up a skillet with 4 tsp sesame oil & 4 tsp veg oil
cook peas until golden.
Transfer to a paper towel lined bowl sprinkle with salt.
(Not sure where this recipe came from my friend gave me another recipe & this one was next to it)

It's been a busy weekend I had Girl Scout Camp!
It's always great fun but planning & getting everything ready just before is a mad mess.
We have to be sure he have enough food & decorations for our site~
& we always have so much food left over it's crazy!

I have been on a No Meat diet after reading the book "the Lean" which is a great book!
She gives you one thing a day to change and the Reason Why you should do it which for me all has made sense. I am only on day 10 but you can go at your own pace. I just ordered the movie "Forks over Knives" I'll let you know all about that after I watch it!
With this No meat diet I have been obsessed with Raw website's which I found these raw Thumbprint cookies that are delicious you can find the recipe here.

I also have been hearing about Kale Chips a lot lately.
I saw them pre made for sale at Wholefoods but they were super expensive.
There are lots of recipes out there to make them so I did and let me tell you they are sooo delicious! I eat them all in one day. They don't taste like Kale so if you don't like kale no worries. You use nutritional yeast which gives it a mild cheesy flavor. Now Nutritional yeast is NOT yeast so where in the world do you find it? I found it at whole foods and was walking around in circles looking for the stuff and was about to give up when I went to the bulk area to get some rice and there it was!! So hopefully this helps you so you don't look like a lost dog in whole foods lol!

As for most everyone it has been unseasonably warm not typical weather here in Michigan for a March but I'm not about to complain & actually I'm afraid it will go away soon.
For some reason with warm weather it brings out the cooking mad women in me! one would think you'd want to be far far from the kitchen on a warm spring day but nope not Crazy Tracie.
What did I make?
Sat it was rice crisp treats & Chocolate Potato cake.
They both have stories of course.
1) Rice Crispy story: if you don't know about FreeCycle I suggest you check it out. Its a place people can offer up stuff to others in the area instead of throwing it away. Well someone was offering up 8 bags of food... Pancake mike, dry milk, mac & cheese... all things we use on a weekly basis so I asked for them & got them! (you have to be fast with this stuff). I went to pick it up, couldn't find the place had to email the lady to call me but finally made it. It was a crap load of food & good stuff too! She was an older lady who said she just couldn't eat it all. I didn't ask anymore questions but I could see her delima with 30 boxes of mac & cheese for one lady! The down side to this..... she's a smoker so everything smelled like a cigeratte! I aired it out & opened everything and put in containers. All is good with my free food ♡
2) Potato Cake: well this is a recipe from my hubby's side of the family it calls for 1 cup of left over mashed potatoes then it's frosted with fudge... the potatoes make it so moist. This cake it so Delicious I can't make it very often! I didn't take a picture because it's not a pretty cake.
Now comes Sunday.
I decide I want to dehydrate some stuff so I whip out the best dehydrating book ever.
I made these Tomato & Cottage Cheese wafers.
They are delicious however I like things salty ( I use no salt ) & I think I over did it a tad on the salt.
I am oddly addicted to they anyway.
You blend the cottage cheese to make it smooth.
Still having Cottage Cheese left I whipped up these Banana & Cottage Cheese wafters (some honey for sweetness). They taste like a cheese cake without the guilt lol!
Now I have Corn Chips in the dehydrator
They have flax seed in them too!
I couldn't sleep last night so while surfing the internet for more dehydrator recipes I came across a Raw Food Blog that has me wanting to make cashew sour cream... I know right cashew's tasting like sour cream? I will let you know. As you might know I'm an extremest & I have a feeling the Raw Food way of life is on my horizon's ... Oh my family is going to hate me :)
To bad right its good for them & they don't even know all the stuff I put in their food as it is.
Ok last dish I whipped up came from a Martha Stewart magazine (the latest issue).

I am not good a directions but the first time I made it I stayed on course yesterday not so much.
I do recommend frying up your bacon first. Turkey bacon is great in this recipe (my hubby didn't even know it was turkey bacon!). Then add onions and mushroom sauté until tender. Cook noodles but don't drain. add noodles to sauté then add 1 cup noodle water (1/2 cup at a time) then add some fresh parm cheese and fresh parsley.
After this recipe I vow to only use Fresh Parm. ~ That other stuff doesn't even look the same I wonder what they put in it to not have to go in the fridge?
